Just gut the cat. Or run a dummy cat. Tiggy' is working on some ace blank ones... They have wadding so they don't sound like an empty cab

So if I took the cat off and cut the top open (so it wouldn't be easy to see from under the car), gutted it, welded it back together it would still pass an MOT? Whereas an obvious de-cat would fail?

Completely irrelevant to the 306 and other vehicles of that age. Our cars are old enough that any back-dated legislation will rarely reach us. A missing cat where one was standard has always been an MOT failure.
