That ebay link has everything you need:-
Outer Bearings x 2
Inner Bearings x 2
Crossmember Seals x 2
Outer Seal Cups x 2
Suspension Arm Seals x 2
Crossmember Seals Ext x 2
Torsion Bar Studs x 2
Eccentric Washers x 2
Torsion Bar Torx Bolts x 2
And I doubt you can get all of that from pug cheaper TBH!

What bits do I essentially need stuff like offset washers can be reused. How easy are the bearings to get out?

Sorry, yeah they can but for the extra they will cost is it worth not changing them??
things you really should change :-
Outer Bearings x 2
Inner Bearings x 2
Crossmember Seals x 2
Outer Seal Cups x 2
Suspension Arm Seals x 2
Crossmember Seals Ext x 2
(so all the actually expensive bits and all the seals)
And I have never done it but will make the assumption that they will be a bitch being a fair way down the tube to the inner ones!

No need for a press/puller to fo the beam, just some big scokets, hammer and threaded bar with some washers for the inner ones. The outer ones will come out with a screwdriver.

Anything that fits in and will rest on the outside race of the bearing will be fine.
