You'll be fine just keeping the standard shocks to be honest, but if you want to upgrade the rear shocks I think quite a lot of people use the Koni rear adjustable so they must be alright!
How much to lower by?

Really? Do they have that much movement in them then? Thinking about uprating the torsions too
Buy coilover, go low,
Lower the front untill the arch is inline with the arch (50 profile) Then the same again on the rear, lower untill the arch is inline with the tyre like so

My 50 profile started to rub when turning when I went about 90mm lower.
Ive new 60mm saxo/106 springs here if your interested.

I wouldnt do it by choice, you know it would handle better on even chepo coilies.

Okay so sounds like coilies are the conclusion next question is then...which ones? And if anyone happens to have some floating about which they don't mind parting with in exchange for some cash then that would be appreciated
