how are you measuring the temperature exactly?

I measure with the gauge in the car and a infrared temp measurement tool
I took out the thermostat today, and now it is cool. Around 70 when i drive and max 90 when i push it a little.
Just had the thermostat changed....

Obviously something is wrong with the thermostat... or is it?

Any inputs?
