Just to close this thread off - issue now resolved!

Turned out to be water/damp in the oil pressure sensor connector. Removed connector and found small amount of water inside.

Warmed up connector and sender with a hot air gun, then after hearing other sensor issues can set off the stop light I worked through those I could find/access easy enough with th same method. Oil pressure seemed to be only one with moisture in though.

Have also since fitted an independant oil pressure gauge just to be sure should it happen again!. Just waiting for the sandwich plate to arrive.
