Bust thermostat.
Shove a new one in.
Though I must say, XUDs have a bad habit of wrecking thermostats in my experience, every time I build an engine I put a new one in and seemingly after a year or so they are doing funny things...
As said, they should sit at a smidge over 80*C all day long once up to temperature.
