You can.
As per the quote I posted from the DVLA, you do not need to have a car insured in order to tax it. Therefore there is no 'Hoping the system updates' as it is not checked, it's just a case of using the telephone or internet service to tax the car before driving away. Obviously you do need insurance to drive the car though!
