As said above, we don't know if the database will check the date on the V5 and the fact that the new keeper didn't have tax from the same day and you might end up with a fine for no road tax.
The rules are the seller surrenders the road tax.
So unless you are suggesting driving the car home on an extended test drive (perhaps with 3rd party other car cover), then completing the purchase and dating the V5 the day after ??
Which I'm not suggesting is gonna work either if you get stopped randomly.
