IMO, economic driving isn't about going slowly.
It's all about how smoothly you drive. If you cruise an a road at a steady 60 mph, you'll get better mpg than driving slower and accelerating out of corners.
I look at it this way: go as fast as you reasonably can (up to a point, anything over 60-65 is going to start having the opposite effect), using the smallest amount of fuel possible to achieve that speed.
