So I've got some new front disks and pads to go on along with some DOT 5.1 fluid. While I'm fairly confident in changing the dicks and pads I have no idea with the fluid, I need to clean the lines or something? I dunno.
My question is, could I put on the new pads + discs now and then change the fluid later or is it something that should just be done at the same time?

So you like changing dicks eh?
Serious comment is serious, changing the brake fluid just entails flushing the system through with new stuff. Easy as pie

Fluid will get darker the older it gets. New, its clear and has a slight straw colour to it. When it gets old, it will start to look like that morning after a heavy night piss. Thats when it needs changing. Just grab a few litres from halfords and bleed from the furthest to the closest to the MC. You want to keep bleeding until the fluid coming out is the same colour as the new fluid then move onto the next calliper and so on.
Id just do it anyway. You will be surprised at the difference it will make!

Yea I got the new fluid 2 litres for 12 quid , should be enough.
So its okay to change to fluid at a later date to the pads abd disks?
