finally got my collision damage claim settled.
Avoiding a Cat-D they've paid out £500.
so that's what it'll be worth going forward - - -

Tell them the car was worth more than that if they want to Cat D it..

I had a chat with the guy from Brent acre and explained the finer points of the car (great condition bodywork, mechanically sound with new bits i had added or replaced - rear beam for example) and he said essentially that he agreed with my valuation and that was what would be paid out (less excess and rebuy fee)

Never accept their first offer. My volcane was hit and written off. I was offered £350 for it initially. After showing photos pre accident and arguing the toss I ended up getting £700.

You still should have rejected the first offer and argued for 1k, they would probably have ended up giving you 750 or more.
